Apple Streusel Muffins

When I am feeling the need for a fresh beginning, breakfast always comes to mind. New beginnings, fresh starts, and a chance to redefine yourself. The smell of apples and cinnamon is a favorite of mine that makes me think of home, comfort, and new beginnings. Here’s to a fresh start and a new week.

1/3 cup butter
2 tablespoons white sugar
2 tablespoons brown sugar
1 egg
2 cups flour, sifted
4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup milk
1 cup apples, peeled, cored, and finely chopped
1/4 cup nuts, chopped

Chefs Corner

In a large bowl, mix the butter and sugars together. Add in the egg. In a small bowl, sift together the flour, baking powder, salt and cinnamon. Add this dry mixture to the wet one alternately with the milk. Add in the apples and nuts just until mixed. Fill the muffin tins 1/3 full and add 1 tablespoon of the streusel mixture (recipe below) and then put a little more of the apple mixture on top. Bake in a 425 degree oven for 25 minutes.

Streusel Mixture
1/2 cup brown sugar
2 tablespoons flour
2 teaspoons cinnamon
2 tablespoons butter, melted

Combine all of the above ingredients together and mix well.
